This time of year around Amish Country, the sides of the roads are bustling with homemade signs of fresh strawberries available from their small home gardens. The only thing that beats the taste of a fully red and ripe strawberry in the summer months is enjoying the jam harvestin the cold winter months!
Mom popped over to the house to help me make up several batches of strawberry freezer jam. Making the freezer jam is super easy as you're basically cleaning, mashing and then mixing the strawberries with the sugar/pectin. Taylor enjoys this chunky jam with his peanut butter sandwiches while I love a drizzle over ice cream!
We followed the less sugar Sure Jell recipe for the freezer strawberry jam which is very easy to follow! If you're looking to preserve more foods for your family, this is a great way to start.
Directions: Take the stemsoff approx. 8 cups of strawberries. Clean, rinse and lightly dry the strawberries. Slice the berries into smaller chunks and take a masher to crush the strawberries. In a saucepan, bring the sugar, water and pectin to a boil. Boil the mixture for 1 minute and remove from heat. Stir in the 4 cups of crushed berries and stir for 1 minute. Ladle the jam into small half pint containers and let cool for 24hrs (or until the jam has set) on the counter. Once the strawberry jam is set, pop your freezer safe containers into the freezer and enjoy them up to 1 year. Enjoy the jam in the fridge for up to 3 weeks.
In about an hour, we had everything done up and were rewarded with jam for the freezer. I have to say that I'm looking forward to making jams and other recipes with Jules when he gets bigger! What great life experiences to learn in the kitchen!
